Feliz Navidad!

“A comer pastel y a comer lechon, arroz con gandules y a beber ron, que venga morcilla venga de to’oo……” Hola everyone and hello snow!!! Yes its Winter (almost technically) and we got hit big time with snow here in the northeast! So what else are we to do besides play in the snow??? Eat, drink, & be merry!! :) :) Que la fiesta empieze!! :) So after you shovel yourselves out, play in the snow and want to warm up a bit, enjoy a cup of low-fat “Coquito” or “Eggnog”. Que rico!!

I am giving you two different recipes since some people are weary of not cooking the eggs. They are both just as good!!

1 12 oz low-fat evaporated milk

1 14 oz low fat condensed milk

1 15 oz coconut milk

2 egg yolks

1/4 teaspoon cinnamon

1 cup of Rum

Blend all ingredients together and process for a few minutes until its frothy. Refrigerate and serve with garnished cinnamon.

3/4 cups of sugar or splenda equivalent

1/4 teaspoon cinnamon

1/4 teaspoon grated nutmeg

1 egg

4 egg whites

1 1/2 cups fat free milk

1 1/2 cups fat free half & half

1 1/2 tsp vanilla extract

1 cup rum

garnish with cinnamon

Combine sugar, cinnamon & nutmeg in a bowl. Add eggs & whites, and beat with a mixer. Gently heat milk in a saucepan and gradually stir in egg mixture. Heat and stirring constantly until it is slightly thickened. Stir in vanilla and remove from heat.  Let it all cool a bit before adding in the FF half & half and rum. Cover and chill in the fridge. Serve with garnished cinnamon
